Local chef to represent Rhode Island in Seafood Cookoff

Nearly 250 chefs were nominated to compete in the Great American Seafood Cookoff August 3rd in New Orleans. Out of the 14 actually selected to compete, one is Chef Rizwan Ahmed, owner and chef of Bristol's Hourglass Brasserie.

This is the first time anyone from Rhode Island has competed. Ahmed says, "I realized that Rhode Island has never been, and I thought we are the Ocean State! We should be at the top of the list!"

When cooking, Ahmed focuses on local products and sustainability. His dish is called Pavé Of Parmesan & Curry Crusted Pollock. It will have pickled cauliflower, smoked artichokes, confit of fingerling potatoes, edamame, bone marrow bordelaise, and Point Judith caramelized squid.

Chef Ahmed is excited to be representing the state, "it's an honor, it's fantastic, to me it's a dream come true."
